- 4t Butter
- 1c Castor sugar
- 2 Eggs
- 2½t Apricot jam
- 1t Baking soda
- ½c Milk
- 1c Flour, sifted
- Pinch of salt
Sauce
- 1c Cream
- ¾c Sugar
- 125g Butter
- ½c Boiling water
- 1t Vanilla essence
Directions
1. Preheat oven to 180°C
2. Prepare a square Pyrex dish
3. Cream butter and castor sugar
4. Add eggs one at a time, making sure they well beaten
5. Add the apricot jam
6. Prepare the milk and baking soda separately and add to mixture
7. Add the flour and salt to the egg mixture
8. Pour out mixture into prepared dish
9. Bake for 45 minutes
Preparing sauce
1. Mix all ingredients together in a pot
2. Pour over pudding as it comes out of the oven
Serve with custard.
